Ingredients
~4lb chicken ($3.16)
Salt
Pepper
Poultry Seasoning
Preparation
Preheat the oven to 450F. Remove any extras from inside the chicken (liver, gizzards, neck, etc…). Pull out any feather remnants that may still be in the skin (I sometimes pop them like a pimple). Rinse bird. Pat the bird dry with paper towels. Sprinkle salt, pepper, and poultry seasoning on the bird, top and bottom. Place in a roasting pan (or any pan that is at least 1 inch deep) breast side up. Put her in the oven for an hour.
Seriously… it’s that easy and tastes great. Serve with any starch and vegetable that sounds good at the time. And make gravy from the drippings if you’re up for it.
