Chicken and Rice


2 lbs of chicken breast w/ bone ($2.98)

3 c of water

1 c uncooked long-grain white rice ($0.25)

1 small yellow onion, chopped ($0.30)



Boil chicken in water until chicken is done (20-30 mintues).  Remove chicken from water.  Allow chicken to cool.  Remove bone from the chicken.  Cut chicken into small pieces.

 Skim off any unwanted fat from the water/broth remaining.  Measure out 2 cups of broth.  If too much has boiled off, just add enough water to have 2 cups of liquid.  Bring to a boil.  Add rice and cook according to package directions.

 While the rice is cooking, sautee onion in 1 tbsp of melted butter stirring constantly until softened (2 – 3 minutes).  Add chicken and ¼ c of water to onions. 

 Once the rice is cooked, add chicken and onions back to the rice.  Mix thoroughly.  Add salt and pepper to taste.  If the texture is a little dry, add a little water (1/8 c at a time).

Serve with something green.
